Beer Beef Brisket

Ingredients

    4 lbs. Beef Brisket (trim fat)

    "Meat Magic" seasoning by Paul Prudhommes

    1 Large onion, sliced

    12 oz. Beer

    1 tablespoon brown sugar

    1 packet dry onion soup mix

    2 tablespoons fresh ground black pepper

    2 teaspoon minced garlic

    1 bay leaf

    1/4 teaspoon dried thyme

    2 tablespoon cornstarch

    2 tablespoon water

    1 can beef gravy

     

    Preheat oven to 350*

    Season meat with the "meat magic" and place in a baking dish.  Cover meat with the onion slices.  Mix beer, brown sugar, onion soup mix, pepper, thyme and garlic in a medium bowl.  Pour over meat.  Cover with foil and bake for 4 hours; do not peek!  When meat is done, take it out of the pan and let rest.

    To make the gravy:  Mix the cornstarch and water together and add to the pan drippings.  Whisk in the beef gravy.  Slice the brisket and serve with the gravy.
